Kensington Furniture Christmas Cookie Recipe

So we all enjoyed eating until we literally couldn't take another bite on Thanksgiving this year, and now it's time to do it all over again! Christmas seems to be sneaking up on all of us this year, and I haven't had a single second to even think about what I'm going to bring home to my parent's on Christmas day! Luckily, Jerry offered to give me the recipe for his famous Christmas cookies.

What You'll Need:

For Cookie Dough:

  • 3 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup margarine, softened
  • 1 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract

For Icing:

  • 1 cup confectioners' sugar
  • 2 teaspoons milk

  1. Combine flour, baking powder, and salt and set aside
  2. In a separate bowl, cream margarine and sugar until light and fluffy
  3. Beat the eggs in 1 at a time
  4. Add vanilla extract
  5. Gradually mix in dry ingredients until fully absorbed
  6. Cover bowl with seran wrap and let chill in the fridge for about 2 hours
  7. Preheat oven to 400⁰F and lightly grease cookie sheets
  8. On a clean and floured area, roll out small portions of dough to about 1/2 inch thick
  9. Cut out different shapes with cookie cutters and bake for 6-8 minutes or until the edges are lightly golden
  10. Immediately remove from cookie sheets and place onto wire rack
  11. In a small bowl, mix milk and confectioners' sugar
  12. Ice a thin layer of icing on top of cookie and immediately coat with sprinkles (if desired)
  13. When dry, ice thin lines over top of sprinkles and another coat of sprinkles for added decoration

Bring your family something sweet this year and take a little piece of Jerry home with you for the holidays.
